Teglio est connu et renomm\u00e9 pr\u00e9cis\u00e9ment parce qu&#8217;il se vante de la culture du sarrasin, la base incontestable des pizzoccheri tant appr\u00e9ci\u00e9es.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">Le pr\u00e9nom &#8220;Pizzoccheri&#8221; semble d\u00e9river de la racine &#8220;pit&#8221; ou &#8220;piz&#8221; avec le sens de morceau ou du mot \u201cpinzare\u201d avec le sens de \u00e9craser, se r\u00e9f\u00e9rant \u00e0 la forme aplatie des p\u00e2tes.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">La premi\u00e8re fois que ce terme est utilis\u00e9, c&#8217;est en 1548, dans un inventaire \u00e9crit par Ortensio Landi. Plus tard, H.L. Lehmann mentionne le &#8220;Perzockel&#8221;, ou sorte de nouilles \u00e0 base de sarrasin.
